Samidori Fresh, vegetal, slightly floral with soft sweetness and clean umami. Light body, gentle buttery finish, and mild astringency. Ogurayama Creamy and umami-forward with a slight marine/oceanic (seaweed-like) note. Mild sweetness balanced by a savory depth and soft astringency. Tennouzan Deep, rich umami with bold, complex flavor and aromatic intensity. Heavier body with notes often leaning toward dark, roasted, or cocoa-like depth. Hamuro no Mukashi Strong, concentrated umami with dense, full-bodied richness. Very smooth, low bitterness, with a thick, lingering savory finish (koicha style).
