With a touch more bitterness than our Matcha Okumidori, it has the strength to cut gracefully through milk, bringing a refined edge and depth to matcha lattes. We even asked a local café to test the quality during prototyping, and it was approved as genuine serving quality. This “bitterness” is not something to fear. It’s very different from the thin, sharp harshness found in cheap matcha. Here, it’s a structured fullness that speaks to the quality of the tea — and it’s exactly what gives a matcha latte its depth. Drinking it on its own as usucha is still enjoyable, with a pleasant verdant character — though we feel its real strength comes out in a latte.
