So, this tea from Yokota Tea Garden is a roasted stem tea, and specifically with stems/stalks coming from their summer harvest in Sayama, Saitama prefecture. Utilizing the stems from high grade spring harvested leaves, Yokota-san roasts them lightly at low temperature retaining their light green color but imparting a strong toastiness and sweetness.
