Pairing: berries, chèvre, or light shortbread

Dulcimer White is a small production of a heritage varietal often called cai cha (or more recently gongmei*) from Fujian province. The aromatics on this tea pop right off the leaf, with a mix of bright vegetal notes and a peppery lift. The soup has a thick and creamy minerality when pushed, or can be floral and soft when brewed gently. This older style of tea has fallen out of favor in Fujian in recent years, but it has a distinct charm all its own. Each purchase is for 25 grams. *Gongmei is a term of a little confusion, as for many years it was used to describe a grade of tea, but now the name gongmei is supposed to only refer to this varietal
