Pairing: sushi, steamed vegetables, or citrusy salads

Style: Green Origin: Jiangxi Province Description: Jiangxi is a land-locked province on the Eastern side of China and is known for the pastoral landscapes and mountainous regions to the West, East and South. It lies in the middle of the Gan River Valley. It has a humid subtropical climate, meaning that winters, though cool, are shorter in duration, with heavy rains during the humid spring and summer. Chun Mee, also known as ‘Precious Eyebrow,’ is processed into small, thin and soft rolled leaves. The delicacy and the fine down on the tea buds lends to the name. It is one of China’s classic green teas. Tasting Notes: Chun Mee is an attractive green tea that offers a round, well-balanced flavour of dried plums, interwoven with a delicate, light grassy smokiness. Notable astringency during longer steeps. Brewing Instructions: 2-3g per cup. 90ºC water. steep 3 minutes. Re-steep. Certified Organic
