Traditional Japanese matcha is crafted by grinding shade-grown green tea leaves (known as tencha) in a stone mill to create a superfine powder. The shade-growing process forces the tea plants to boost production of chlorophyll, theanine, and many other compounds to cope with the lack of sunlight.
