FYN ROOIBOS is a long-cut rooibos sourced direct from an organic farm in South Africa's Cederberg mountains. The Cederbergs are part of the Fynbos belt, a topographically Mediterranean shrubland home to a biodiverse ecosystem ideal for rooibos cultivation. It's this terroir that imbues rooibos with its signature earthy sweetness and complex flavor layers. Produced in the classic style, the rooibos is cultivated, harvested in long strands, and hand-whacked on stone to encourage the enzyme activity responsible for oxidation. This creates a vague black tea quality, with savory notes of roasted nuts and root vegetables amongst dried fruit. This lot is slightly under-bruised, and maintains the bright zest of green (unoxidized) rooibos in its light red and orange needles. Expect medium body and a subtle medicinal aspect. Unflavored and unblended, FYN ROOIBOS is an exercise in terroir's influence and the flavor potential of non-tea plants. Caffeine-free and sourced with elevated signature beverage service in mind, this tisane is best served hot and neat or chilled over rocks with nut milk and citrus simple.
