Product Information Ingredients: Green tea Cultivar: Blend - Handpicked Samidori + Machine harvested Okumidori Cultivation: Cultivated using centuries-old traditional methods with the exception of plastic canopy shading instead of traditional reeds and straw. Tsuji-san also conducts soil analysis monthly and analysis of amino acid content in the leaf (which forms the umami flavor) annually to craft the best leaf year after year. Pesticides are used minimally in cultivation to maintain leaf quality against insects and disease. Harvest: May (see variant info for year...in general leaves are aged for about 5 months before grinding is allowed so the newest harvest is released in Oct-Nov). The Samidori is handpicked for maximum quality, and blended with machine-harvested Okumidori from a partner farm (this unfortunately disqualifies the product from the Heritage Matcha classification, but it is still very top level imperial ceremonial grade!) Processing: Steamed and dried in a traditional tencha brick oven. Carefully refined removing stems and veins before grinding by stone mill. Grinding: Stone mill Region: Uji, Kyoto Production: We will be receiving 40kg per month for 5 months starting March 2026. 20kg bulk bags will begin to be repacked as necessary.
