Why we love it: It's bright, light and refreshing with a smooth texture. It is minimally processed: the leaves are simply withered and dried, honouring its natural flavour. As the second picking grade of white tea, it is made of one bud and two leaves, giving it a more robust flavour, while retaining the delicate sweetness of the buds. It ages well - there is more room for the flavour to change as the leaves slowly oxidise over time. Why is it called White Peony? There are a few theories: some people say it was common for tea traders to name teas after flowers, and peonies symbolise wealth in China.
