Originally developed during the Tang dynasty, Matcha’s peak sophistication in Chinese tea culture was reached during the Song dynasty. It was also during this period that the method of Matcha preparation and even the necessary tea seeds for cultivation were introduced in Japan. Closely linked to Zen Buddhist practices, Japan became the steward of this style of tea preparation, while tea trends in China moved away from powdered tea towards loose leaf over the next several centuries. Several centuries later, we’re proud to offer organically grown Chinese matcha that employs the strictest Japanese standards for growing and processing. With Japanese matcha production unable to satisfy an increasing demand over the years, expertise and processing practices have migrated back to China, with Japanese producers setting up gardens and facilities in prime growing regions. This has led to significant improvements in quality and a wider range of grades available. Compared to our standard grade, this matcha exhibits a more vibrant jade-green colour. With a similar deep umami quality, the overall flavour is more complex, and the texture creamier, with no noticeable bitterness. The aftertaste is equally enchanting, accompanied by a lingering sweetness. While both offerings of this matcha can be considered ceremonial grade, our Premium option offers an elevated experience deserving of more attention. For this reason we recommend this grade for direct whisking, rather than use in lattes or other preparation. Using proper shade-growing practices (4+ weeks), traditional slow speed stone grinding, and adhering to the processing standards of the Japanese parent company, both grades of our Dose matcha also carry certified organic status in China. $0.89-0.92/gram Region: Hubei, China Harvest Period: Spring 2025
