Overview
Pairing: berries, chèvre, or light shortbread

Fuding is the home to three famous teas. Bai Hao Yin Zhen (Silver Needles), Bai Lin Hong Cha (aka Golden Monkey), and Bai Mu Dan (aka White Peony). Fuding area teas enjoy fair weather and rich loamy soil giving them a special sweet and fruity quality. Our "White Peony" is harvested from first flush of Spring harvested tea. The taste is sweet and fruity, with very little astringency. We recommend brewing with 90C water gong fu style to get the best taste from this wonderful tea! Origin: Fuding, Fujian Province First Flush Spring Harvest Altitude: 600 meters Varietal: Fuding Da Hao Fuding Bai Cha In order of tippiest to coarsest: 1st Grade - Bai Hao Yin Zhen (Silver Needles, Pure Bud) 2nd Grade - Bai Mu Dan (1 leaf to 1 bud) 3rd Grade - Gong Mei (2 leaf to 1 bud) 4th grade - Shou Mei (3 leaf to 1 bud)
