Tea farmer Hiroki Matsumoto-san smokes black tea with a number of different types of wood. The wood used to smoke the green tea (spring sencha) changes from production to production, and gives a hint of smokiness to compliment the vegetal notes of the tea. He utilizes the UNESCO designated World Heritage agricultural tradition, Chagusaba, to cultivate his tea leaves. This tradition requires farmers to cultivate sasa grasses surrounding the tea fields, and use the grasses as fertilizer in the fields.
