Overview
Pairing: breakfast pastries, aged cheese, or dark chocolate

Eastern Hualien County features some of the most unpredictable weather patterns in Taiwan. Mr. Hsieh is a decorated and craft-driven producer, constantly expanding the possibilities of his theaculture through experimentation. Here he starts with his prized 'Da Ye' stock, bitten by the tea jassid, roasting and compressing it a ball shape oolong instead of black tea. In his quest to bolster Hualien's reputation for "Honey Aroma" style teas, oolong productions are the next logical step. Coastal Hualien does not have the benefit of high elevation, so to emulate the floral, stonefruit and honey qualities, it takes craft and a spirit of invention.
