Mountain Pearls Oolong is Fujian oolong made in a style close to Ti Kuan Yin, and the name itself is a nod to how it's sometimes labelled: pearl mountain tea. Processing keeps the roll light, so the dried leaf stays relatively open rather than tightly balled. That looser leaf gives a bright, fragrant cup with a thick mouthfeel and plenty of character in the taste. Tea & Coffee brews it with water at 75 to 80 degrees, infusing for one to three minutes; Teatico's own note puts the steep closer to three minutes if you want a fuller cup.
