Mr. Nakai is a talented young farmer that specializes in sencha, but he also produces some excellent matcha as well. His father is credited with creating the JAS logo, which is pictured on every pack of green tea that has been certified by Japanese Agricultural Standards. About the Farm This farm is located in Wazuka, right outside the old capital of Kyoto. This region is famous for the production of matcha tea. Powdered tea was the original way to consume matcha in Japan, and the first tea plants to be cultivated in Japan were grown right outside Kyoto at Kozanji temple in the Toganoo mountains. How to Brew it Add 2 grams of matcha to a bowl and then pour in 100-150ml of 160-175F water.
