An excellent introduction to traditional matcha, this Isuzu (“fifty bells”) grade is suitable for hot thin tea preparation (usucha), or for a memorable latte or iced drink. The bright, crisp vegetal notes are matched by a natural creaminess—reminiscent of almond milk—that makes each sip refreshing and inspiring. For thin tea, try ~2 grams (2 chashaku scoops) matcha and 3 oz (1/3 cup) hot water (190°F) per serving, and whisk vigorously with a chasen in a chawan or other wide bowl for about 20 seconds. Experiment with the amount of water and temperature to find your preferred formula. Marukyu Koyamaen first began production 350 years ago in Ogata, Uji.
