Perhaps the most popular tea in Japan today, fukamushicha is a variant of sencha in which the leaves are steamed for 60 seconds or longer (vs 30-40 seconds for normal sencha). It is said that this deep steaming method is appropriate for thick mountainous tea leaves and because of the longer steaming, the leaves become extremely soft and break apart easily. When the tea is steeped, it results in a thick-deep green color with a rich flavor with little astringency. This tea can be steeped at both lower and higher temperatures, please enjoy finding your personal preference!
