Perhaps you are familiar with a hojicha but exactly is a kuki hojicha? A kukicha (โtwig teaโ), or stem tea, is made with parts of the tea plant that is usually not used for making the most common type of green tea such as sencha. So, this tea from Yokota Tea Garden is a roasted stem tea, and specifically with stems/stalks coming from their summer harvest in Sayama, Saitama prefecture. Utilizing the stems from high grade spring harvested leaves, Yokota-san roasts them lightly at low temperature retaining their light green color but imparting a strong toastiness and sweetness.
