Style: Green Origin: Fujian Province, China Description: White Monkey, also known as Bai Hou, is a green tea made traditionally with the first two leaves and the bud of the tea plant. The appearance of the dried leaf is beautiful and awe inspiring. The soft, downy white appearance of the buds, reminiscent of the soft fur on the hands of a monkey, inspired this tea’s name. These little leaves slowly unfurl during the steep, transforming the water to a clear and soft, ivory green with a hint of pink. White Monkey is produced on a small farm in the Wuyi Mountains in the North of Fujian province. Harvested pre-Qing Ming it was one of the first plucks of the season in April 2022, contributing to the delicacy and complexity. Expertly crafted, this perfect green for steeping again and again, as the experience changes as the leaves open. A playful, lush and relaxing tea. If you have never experienced 1st flush Spring harvested Chinese green tea, this tea offers a beautiful introduction. Tasting Notes: A gentle and nutty sweetness unfolds due to the high count of white buds. A subtle dew-drops-on-petal perfume rises with the steam. The steep offers a delicate buttery and toasty rice flavour, accompanied by a rich vegetal nectar. It is belly-warming, satisfying and offers a beautiful everyday cup. Will compliment sweet or savory dishes. A pleasant astringency with longer steepings. Short steepings highlight the more delicate, sweet and lush notes. Thirst quenching, with a green sweetness that lingers pleasantly and keeps inviting you back. Brewing Instructions: 2-3g per cup. 85-90C water. Steep 2 minutes. Drain all tea from leaves. Re-steep with same method. We recommend steeping with more tea, and less time. For example, 5-6g per cup, and 10-30 second steepings.
