Onizuka-San is a fifth-generation organic tea farmer in Kagoshima, Japan. He is making mid-steamed “chumushi” sencha with rich and juicy character owing to his special soil management and masterful cultivation techniques. Onizuka-San is growing several cultivars for our organic sencha for us. He puts his heart and soul into organic farming and all aspects of tea production. His organic sencha is always amongst the best of our selections each year with robust and rich character. This batch of Yutaka Midori is a full-bodied and juicy sencha with rich flavors of umami and sweetly toasted chestnut. No matter hot, cold, or ice-brewed, this tea really delivers the juicy and vivid green characteristics of tea from Kagoshima’s fertile volcanic soils. Yutaka Midori (豊か緑) is a prominent and widely grown tea cultivar of the Kagoshima region, and its name translates to “rich green.” It grows well in warmer and lower-elevation climates. We gave this batch a light toast with an infrared micro-roaster to raise aromas of toasted chestnut and hazelnuts, resulting in a welcomed sweetly toasted note that complements the rich body and deep umami.
