Ti Quan Yin, also known as the Iron Goddess of Mercy, is one of China's most famous teas. China is known for its greenish, rolled oolongs. Traditionally, men using their feet and body weight would roll these oolongs into tight balls in something like a pillowcase. Lastly, they dried the tea over smoldering charcoal. These days, machines are used to slowly roll the tea in pillowcases, making balls of oolong tea. This tea has been finished over charcoal, so it has a toasty flavor.
