Overview
Pairing: breakfast pastries, aged cheese, or dark chocolate
This tea is a "ripe" or shou Pu-Erh variety sourced from Xishuangbanna in Yunnan, China. The term "shou" describes a method that accelerates the aging process down to a few months. After its initial fast aging process, this tea has been slowly aging for over 20 years. Like a bottle of fine wine, it is mellow and delicious. We break the large cakes (bings) into more manageable chunks.
