The appearance of the dried leaf is beautiful and awe inspiring. The soft, downy white appearance of the buds, reminiscent of the soft fur on the hands of a monkey, inspired this tea’s name. These little leaves slowly unfurl during the steep, transforming the water to a clear and soft, ivory green with a hint of pink. White Monkey is produced on a small farm in the Wuyi Mountains in the North of Fujian province. Harvested pre-Qing Ming it was one of the first plucks of the season in April 2022, contributing to the delicacy and complexity. Will compliment sweet or savory dishes. A pleasant astringency with longer steepings. Short steepings highlight the more delicate, sweet and lush notes. Thirst quenching, with a green sweetness that lingers pleasantly and keeps inviting you back. Brewing Instructions: 2-3g per cup. 85-90C water. Steep 2 minutes. Drain all tea from leaves. Re-steep with same method. We recommend steeping with more tea, and less time. For example, 5-6g per cup, and 10-30 second steepings.
