Good things in small packages: this stack of seven disks from Yunnan offers a charming introduction to compressed white tea. The large assamica leaves—native to this region—have undergone a minimal processing of hand-picking and sun-drying before being shaped into single servings. Infuse multiple times with water around 185°F, or try brewing with hotter-than-usual water for a white tea (boiling, or just below) to bring out more flavor that still retains smoothness. Use one entire disk for a larger pot, or divide it into two servings for a smaller vessel. Herbaceous notes of chicory root are matched by aromas of salt, artichoke and aged books, and a mouth-coating texture: a deep, earthy tea, well suited for pu-erh drinkers or anyone seeking a comforting, full-flavored cup.
