Jasmine Phoenix Pearls | 茉莉鳳眼 Tasting notes: Grassy, jasmine, sugary Origin: Fuzhou, Fujian, China Oxidation: ⦿○○○○This tea's exotic fragrance is created by layering green tea leaves with fresh jasmine blossoms up to seven times to absorb their essential oils. Why we love it: It's fragrant without being overly perfumy or "soapy". It takes a lot of work to produce: fresh jasmine blossoms are layered in with green tea leaves and left overnight, then separated out for fresh blossoms to be layered in and so on. This process is repeated seven times over 14 days for the tea leaves to absorb the flowers' essential oils. This traditional craft of floral infusion goes back generations and requires decades to master. Because the floral aroma is infused into the tea leaves themselves, the tea has a smooth, balanced flavour. What is green tea?
