Style: Green Origin: Fujian Province, China Description: A sublime and high quality jasmine green tea from the Fujian Province. This jasmine green is recognized as perhaps China’s finest jasmine offering. The tender first bud and two leaves are plucked in early spring to be made into this soft green tea. When the jasmine flowers come into bloom, the fresh tea leaves are layered with the freshly picked blossoms. The jasmine flower is harvested in the morning whereas the scenting will take place in the evening when the harvested flowers open up. The pearls are then refired, drying them in order to remove the flowers moisture.The tea is then rolled into beautiful tight spirals, which unfurl as they steep to release their divine aroma and naturally sweet, fresh bouquet of flavour. The consuming fragrance of jasmine is absorbed by the tea, resulting in a gorgeous, floral cup. Tasting Notes: The sweetness of the fresh jasmine lingers on the nose reminding the senses of freshly picked daisies in the spring. A light first steep with a fresh jasmine sweetness covers the back of the palate. This profile gradually builds into a more bold, clean, slightly astringent cup into the second and third steeps while the vegetal qualities of the green tea greet the back of the palate. Option to rinse the hand rolled tea leaves prior to the first steep to awaken the leaves, help them unfurl and better absorb water for an even and flavourful steep. Brewing Instructions: 2g per cup. 75-80ºC water. Steep 3 minutes.
