Overview
These tea leaves are folded lengthwise while drying on warm trays and then heated in wood fuelled pans to stop the fermentation. The leaves in sencha tea have a distinctive grass green colour and the grass-like flavour and sweetness will be a pleasure to the sencha enthusiast. With sour cherries for added fruity flavour. Brew for 1-3 minutes. Water temperature: 75-80C Use 4-5 heaped teaspoons of tea per litre of water.
