Hai Di Lao Yue (海底捞月) is a unique varietal that is grown in only one village in the Wu Dong mountains! Annual output is less than 60 kilograms for this varietal! It's called "Hai Di Lao Yue" which means something like "Sea Fishing". It's called this because when brewing this tea only a small amount of tea is needed (much like the relationship of a single fish to the whole ocean!) to bring flavor and aroma to the water! This varietal grows on Dayin Mountain near the Shenya Village in the Phoenix district of the Wu Dong mountains. Originally a cultivar from the Wu Yi area of Fujian this has been growing in the local area for more than a century. The tea plants from which our offering was harvested range in age from 40-100 years old and grow naturally without intervention. Hai Di Lao Yue is a medium level of roast (for a Dan Cong) that was painstakingly charcoal roasted and then rested for a period of 3 months and then stored in clay urns (mostly airtight) until October of this year.
