While the 2021 versions offer an interesting insight into the potentialities of aging yellow tea, this tea here shows you what traditional yellow tea really can be. It is up to 50% fermented because it has undergone the traditional "three smother three bake" and has the characteristically dark leaf color that this process creates. The tea looks very dark on the wet leaves, but still smells ever so sweetly vegetal, like a maojian from Hubei. The leaves are naturally curled and take no particular beautiful spiral or intentional shape. When brewed, the leaves give off their characteristic cake-like aroma which transfers in the cup to a sweet corn flavor. This is a fascinating tea that we have had to come back to time and time again to even begin to write these tasting notes, and we highly recommend sampling this tea for yourself if you're interesting in what a deep fermented yellow tea tastes like.
