CURRANT is a tisane blend of organic black currants, hibiscus petals, lemongrass stalk, and long-cut rooibos. Sourced direct from an organic farming cooperative in Fresno, California, the currants are zante cultivar (a sweet, seedless species), and constitute the majority of this house-made blend. CURRANT is blended to be fruit-forward with an herbaceous citrus element atop a nutty foundation. Steeped hot for several minutes, the blend evokes a strong purple fruit aspect and a sticky aroma of berry compote that betrays its light, refreshing body. Complex sweetness, but no added sugar—only that naturally present in the fruits, flowers, and shrubs. This tisane is blended in small batches with signature drink service in mind. It plays well with high fat dairy for a vibrant take on the classic berries and cream, or with shrubs and sparkling waters as a sprightly spritzer. Serve it as a concentrate (1 gram tea : 2 ounces, water steeped to-strength) over rocks with topo, or piping hot with steamed cashew milk.
