China Superior Fancy Oolong Organic Tea Only a few batches of this China Superior Fancy Oolong Organic Tea are produced each year for export. This is a top China Superior Fancy Oolong Organic Tea with slight honey notes. The bright amber coloured cup develops a lovely flowery fragrant aroma. The taste ranges from mildly spicy notes with sweet soft hints of honey to almost earthy rye bread. This rich taste is caused by cicadas bites. The insects make small bites in to the leaf surface and minute amounts of cell sap evaporate, this moisture starts to oxidise while the leaf is still attached to the plant. Giving it, its unique flavour. The leaves are harvest during May when only a few cicadas are present in the fields. For the harvest, only the youngest leaves and bud are picked. There is little processing thereafter apart from drying the leaves in the sun.
