Style: White Origin: Fujian Province, China Description: White tea is unique in the tea world for its lack of processing – the flavours from such fine plucks are delicate and true to the terroir where the tea was grown. Barely oxidized, white tea is made either from the young, supple bud of the tea plant on its own, or accompanying the first leaf just below, and is dried flat. White Peony has its origin in the Fujian and Zhejiang provinces of China. The name ‘white tea’ – Bai Mu Dan – refers to the white silvery hair on the bud of the tea plant. Enjoy the luxurious delicacy and gentle sweetness that this fine tea type is known for –truly a divine treat for the palate. Tasting Notes: Sipping this cup can be described as a journey through the growing season of tea. It begins with a delicate, sweet aroma that blooms into a floral scent reminiscent of fresh summer squash blossoms. The palate of the steep is that of sweetgrass and sun-warmed hay, with undertones of fresh melon. The earth tones of autumn come through in the linger, and during longer steeping - warm and gently toasty leaves, with notes of late rose blooms. The aroma left in the bottom of the cup is a gentle reminder of roasted pumpkin seeds. Brewing Instructions: 2g per cup. 85ºC water. steep 3 minutes. Re-steep. Organic
