Hand harvested shaded gyokuro leaves and stems (karigane) from the very first harvest are separated and roasted in three batches: leaf, stem and any smaller particles. After these three separate roasts, they are re-blended to create an umami rich green tea with a piercing sweetness and delicate, gentle roasted aroma.
