Style: Herbal Origin: Blended at Westholme Ingredients: Nettle Leaf, Lemon Verbena, Lemon Peel, Cinnamon, Cardamom, Ginger Root, Black Pepper Description: In 2012, we were invited to contribute to the James Barber Chef’s Table Fundraiser - the theme of the event that year was Honey. Naturally, we looked to our garden friends for inspiration. Bees are hard-working, friendly, finely dressed in their yellow pollen breeches, and have a bit of a sting (when necessary). This led to the creation of a scrumptious infusion with each of these qualities in mind; the calm and earthy nettle leaf, brisk yellow lemon peel and zesty lemon verbena combine with a gentle tally of warming masala spices. Much like the tail-end of a bee, the cup has a 'piquant' peppery ginger finish. The result is a lively and delicately spiced herbal chai that pairs beautifully with honey, as intended. Tasting Notes: Earthy notes of nettle ground sweet, complex masala spices on the tongue. Gentle citrus zest and the natural sweetness of cinnamon and ginger enliven each sip.
