This incredible Old Tree Phoenix Shui Xian (Dan Cong) from the 1990s is a rare find in the market today. The beautifully aged, large tea leaves have been recently re-roasted, producing an alluring caramel aroma as you add the leaves into a warmed teapot, and a unique, pinkish tea color in the first couple of infusions. In addition to the easily recognizable floral and “Hui Gan” notes commonly associated with Dan Congs, the smokiness from the roasting adds a robust character and a strong, long-lasting mouth-feel. This tea has very noticeable “cha qi” and is definitely a special treat for the winter time!
