Taiwanese high mountain oolongs, or gao shan, are well known for their rich, complex aromas and flavors that last through multiple infusions. As the carefully shaped balls open more with each subsequent steeping, new dimensions are revealed in the cup. This spring lot hails from a prestigious producer, Lu Li Zhen, whom we have been fortunate to know for years. His farm lies at 5,000 feet elevation in southwestern Taiwan, and the production harkens to an older processing style: higher oxidation of the leaf, and a finishing deep roast over a long period of time. The resulting tea is incredibly well balanced; it holds notes of white flowers, freshly baked bread, apricot jam, caramel and black pepper—like a walk through the woods with a picnic basket.
