The latest addition to our matcha lineup! Made using traditional techniques, this vibrant Japanese tea hails from the well-known regions of Uji and nearby Nishio in Aichi Prefecture. The leaf is carefully shaded for a few weeks before harvest, which boosts levels of certain amino acids that contribute to rich, umami flavors. It’s then slowly ground into the bright green powder and graded for culinary or ingredient use: lattes, smoothies, cooking and baking. Ingredient grade matcha has the same health benefits as traditional grades, and its bold but balanced bittersweet flavor is especially refreshing when prepared as an iced drink. The karasu or crow adorning the tin is a common bird in Japan, yet it carries both cultural and spiritual significance. Considered highly intelligent and a messenger of the gods, we find it a fitting symbol for an everyday drink of enlightenment. Try this culinary grade for preparing iced matcha: in a cocktail shaker or large jar, add 3 g sifted Karasu Matcha over 4 oz (1/2 cup) ice cubes. Pour in 8 oz (1 cup) cold water, cover, and shake vigorously; strain and serve over ice.
